I love using Dry Sparkling's sodas in my cocktail recipes. They're pretty subtle tasting and never too sweet, and I find they work especially well with fresh ingredients. This recipe uses the Dry Rhubarb, along with fresh peppermint and gin. Super simple and refreshing for a hot summer day. I build this cocktail in the glass, similar to a mint julep, because I don't want to lose any of the peppermint oils after crushing.

Rhubarb Mint Spritzer
1.5 oz gin
5 leaves fresh peppermint, plus a sprig for garnish
Pinch of raw sugar
.25 oz fresh lemon juice
3 oz Dry Rhubarb soda
Muddle peppermint leaves with raw sugar (reserve mint sprig for garnish)
Add ice to glass- you can use either crushed ice for a more julep-y drink or cubes for a simpler approach
Add lemon juice and gin and stir until glass is frosty
Pour rhubarb soda over the top of the drink and give another stir
Garnish with mint sprig.
If you have mojito mint in your garden, that will work as well. Spearmint, however, will really clash with the other flavors in the drink, so I don't recommend it. If you can't find Dry Rhubarb soda, this can still be a tasty mint spritzer with tonic instead.
This recipe works well in larger batches for pitchers, just multiply everything by 4-8 depending on the size of your vessel.
