Sweet Pea: Market to Glass Cocktail Recipe


I found these beautiful sweet pea leaves, flowers, and tendrils at the Magnolia Farmers Market yesterday and I really wanted to come up with a way to use them in a cocktail. Mt first thought was a gin & tonic, and I went from there. The result is a semi-sweet, very fresh tasting cocktail that gets its brightness from a quick pea leaf simple syrup. There's a lot less sugar in the simple syrup than in a classic simple syrup, since most of the sweetness comes from the pea leaves.

Pea Leaf Simple Syrup:

1 handfull pea leaves and stalks

.5 cup water

1 tbsp sugar (I used cane sugar)

Combine ingredients in a sauce pan and simmer until the leaves are bright green and the sugar is completely dissolved. The recipe can be scaled up, I just made enough for a few drinks.

Sweet Pea:

1 oz gin

10 heavy dashes pea leaf syrup

1 tsp tonic syrup

.5 oz lemon juice

Combine ingredients in a mixing glass with ice, stir until chilled, and strain into a glass packed with ice.

Top with soda water and garnish with pea tendrils and flowers. (tonic water can be substituted for the tonic syrup + soda water.)

Ingredients Used:

gin: I used Botanist Islay Dry Gin, one of my favorite gins. The floral and citrus notes are what I prefer in a gin and tonic, so it seemed perfect for this recipe

tonic syrup: El Guapo Tonic Syrup. I received this tonic syrup in one of Napa Valley Distillery's subscription boxes and I think it's well worth purchasing. It's got a great citrus/bitter tonic flavor but without the mouth-coating feeling that you often get with a lot of tonic waters. I use it in a lot of drinks, both with soda water and without.
