I found these beautiful sweet pea leaves, flowers, and tendrils at the Magnolia Farmers Market yesterday and I really wanted to come up with a way to use them in a cocktail. I love using Dry Sparkling's sodas in my cocktail recipes. They're pretty subtle tasting and never too sweet, and I find they work especially well with fresh ingredients. This recipe uses the Dry Rhubarb, along with fresh peppermint and gin. Super simple and refreshing for a hot summer day. I build this cocktail in the glass, similar to a mint julep, because I don't want to lose any of the peppermint oils after crushing.

This cocktail really showcases home made Juniper Rosemary bitters. It's light, citrusy, and has an great herbal quality due to the rosemary. Enjoy!
Juniper Rosemary Spritz
1.5 oz gin
3 oz juniper soda
5 dashes juniper rosemary bitters
.75 oz fresh lemon juice
Rosemary sprig or lemon peel for garnish
Stir gin, lemon juice, and bitters in a mixing glass with ice
Pour over large ice cube in a rocks glass
Add juniper soda

I just began experimenting with making our own bitters at Glass Goat, including the coffee bitters here. I used my favorite coffee beans, the Hayes Valley Espresso roast from Blue Bottle Coffee in Oakland, California. I'm about halfway through the process with these right now, so I thought I'd share how it's going so far.

This sake toddy is super simple to make and very warming. I like to use a Jumai Ginjo sake, which is filtered and has no distilled alcohol added. You can buy the glass pictured HERE
Sake Toddy
2 oz Junmai Ginjo sake
3 oz hot water
5 clove studs
1lemon slice
Combine sake and hot water.
Push cloves into lemon slice
Float lemon slice on top

Juniper Rose Syrup
tbsp juniper berries
1 tbsp dried rose hips
1 cup water
1 cup sugar
grind 1 tbsp juniper berries with a mortar and pestle
simmer all ingredients together over low heat for 20 minutes
allow to cool and store in a glass container
should stay in the fridge for 2 weeks

This take on the Bee's Knees cocktail has a stronger honey presence than the classic. Our River Road Farm honey is really mild; it's delicate enough that it won't overpower the other flavors in the drink. The goat rocks glass pictured can be purchased here.
River Road Farm Bee's Knees
1.5 oz gin
1.5 oz honey syrup (recipe HERE )
.75 oz lemon juice
extra honey for garnish
